The star ingredient is premium mold-cured bonito from Makurazaki. Repeated mold-curing and sun-drying age the fish slowly, deepening its aroma and building the complex umami that AKOMEYA was aiming for. To bring that bonito flavor forward, the blend also includes roasted flying fish ("yaki-ago") from Hirado in Nagasaki Prefecture, muroaji mackerel flakes, and kombu kelp.
