Ashihamono Sujihiki Knife Japanese-Style Handle 270mm

Order via Japan Rabbit

The Ginko series 270mm Sujihiki slicer from Ashi Hamono brings effortless precision to your kitchen workspace. With a narrow blade and extended length, it is purpose-built for trimming sinew, portioning meat blocks, and handling delicate cutting work. Its generous edge length even lets it double as a sashimi knife when preparing fresh fish.

Ashi Hamono knives are heat-treated to strike an ideal balance between hardness and toughness. Skilled craftsmen hand-sharpen each blade individually, delivering an edge that is both exceptionally sharp and resistant to chipping. This knife comes fitted with a traditional Japanese octagonal magnolia wood handle and a buffalo horn collar. For Japanese-style handles like this one, the 270mm length is measured from the machi (the base of the blade) to the tip, giving you superior reach and control.
