Ginga Coffee brings a rich, medium-roast decaf coffee from Japan with its Sumatra Shinzan beans: grown without pesticides and hand-picked one by one at peak ripeness. This coffee is over 99.9% caffeine-free without sacrificing depth. It builds a satisfying body around clean bitterness and subtle sweetness, finishing with Sumatra's signature herbal, spicy, and deeply earthy notes.
The beans come from the volcanic soil and cool mountain winds around Lake Toba, the world's largest volcanic lake, and Pusuk Buhit in Indonesia, taking over as an updated version of Ginga Coffee's earlier Bali Shinzan line. To preserve every nuance of flavor, the caffeine is removed using the chemical-free Mountain Water Process in Mexico, drawing on pure water from the towering Pico de Orizaba and carbon filtration to protect the beans' natural flavor compounds. Ginga Coffee then roasts the beans in Japan using its own three-stage roasting method and packs them fresh into resealable zipper bags. For best results, keep the bag in the freezer to preserve that just-roasted aroma.
Ginga Coffee Sumatra Shinzan Decaf is a medium-roast, pesticide-free coffee with 99.9% or more of its caffeine removed. Formerly sold as Bali Shinzan Decaf, this is a renewed Indonesian offering.
It has a full-bodied profile centered on bitterness and sweetness, with a clean bitter note, roasted aroma, and a lingering herbal, spicy, earthy Sumatra finish. The coffee is made from hand-picked, fully ripened red cherries grown in fertile volcanic soil with cool mountain winds and abundant water from the Lake Toba region.
Caffeine is removed using the Mountain Water Process, which uses natural water from Mexico’s Orizaba Mountain and carbon filtration, without chemical solvents. Flavor components are preserved through the process using an extract prepared from the same type of beans. Freshly roasted beans are packaged in a resealable zipper bag.
