Stem tea, known in Japan as karigane, is prized for its high amino acid content, giving each steep a smooth, umami-rich character balanced by a bright, refreshing finish.
For the best results, brew the first steep slowly at a low temperature (around 60°C) to draw out the tea's sweetness and umami while keeping its refreshing edge in balance. For the second and third steeps, try a quicker infusion with slightly hotter water to bring out a different side of its flavor.
This tea is produced by Kirichi Yuta of Uji Hinode-en in Uji, Kyoto, using domestically grown green tea leaves. Each package contains 90g, with a shelf life of 365 days from the date of manufacture. Store away from heat, humidity, and strong odors to keep the leaves at their best. This is a brand-new, unused item.
