Experience authentic Tosa craftsmanship with this hand-forged 210mm Wa-Gyuto by Kyohei Shindo. Built with an Aogami No. 2 steel core and finished in a classic dark Kurouchi style, this chef's knife is designed for exceptional sharpness and smooth, effortless cutting. The blade measures 215mm in length, 49.1mm in width, and 4.4mm thick, with a total length of 370mm. At just 141g, it feels light and balanced in the hand, ideal for long stretches of kitchen work.

Kyohei Shindo was born in Sapporo, Hokkaido, and after graduating from a university in Okinawa, moved to Kochi Prefecture to pursue his dream of making knives that truly work as tools for cooks. At the time, there were no blacksmiths taking on apprentices and no formal system for training successors, so he joined a Tosa cutlery wholesaler instead. On his days off, he borrowed space from blacksmiths he worked with to train independently, gradually sharpening his forging skills until he struck out on his own in 2019, founding his workshop, Kyohei Tanzou.

He continues to make knives that are easy to sharpen, satisfying to use, and worth the extra care they ask for, with the hope that cooks anywhere in the world might choose them. This handcrafted knife is brand new and unused.
