Forged by Masamoto Sohonten from Shirogami No. 2 (white steel), this honkasumi gyokuhakuko mioroshi deba brings real Japanese fish-butchering precision to your kitchen. The blade runs 207mm with a total length of 345mm, a 46mm blade width, and a 7mm spine, all in a 247g package that balances weight with control.

Masamoto Sohonten is one of Japan's most respected names in knife making, trusted by professional chefs worldwide for its traditional forging techniques. The mioroshi deba shape combines the heft of a classic deba with a slightly slimmer profile, making it well suited to filleting and breaking down fish with precision.

This is a used knife, sold as-is with no notable scratches or dirt reported by the seller. Sharpening wear is minimal, and the blade retains its original shape without excessive metal loss. It has been resharpened through a full whetstone progression: Kensho stones at 400 and 1000 grit, a Bester 3000, an Otani 6000, and a final polish on a Morihei Karasu 9000 grit stone, leaving it with an excellent, ready-to-use edge.
