Enkel Tool Shop 4L Ceramic Jar, Tajimi Gifu Takada Ware
Step into traditional Japanese fermentation with the Enkel Dougu-ten ceramic kame pot. Designed with a gentle, rounded silhouette and a minimalist finish, this 4-liter container blends smoothly into modern kitchens. Its wide mouth makes it simple to pack ingredients, fit in weight stones (it easily holds a 1.5kg stone about 15cm across), and clean thoroughly after use. Practical touches, like a comfortable lid knob and a rounded base, make lifting and handling easy even when the pot is full.
This original vessel is produced in Tajimi, Gifu Prefecture, home to Takada ware and over 400 years of pottery heritage. Made from local Takada clay, the thick ceramic walls buffer contents from sudden temperature swings, helping the lactic acid bacteria and yeasts behind fermentation stay stable. The glazed surface resists salt and acid, while the opaque body blocks light to guard against oxidation and discoloration. It is well suited to aging miso, keeping a nukazuke rice bran bed for pickling, or curing batches of salted umeboshi plums.
The pot stands about 24cm tall with its lid on (19.5cm without), measures roughly 20cm across, and holds a full 4 liters. As a guide, that capacity suits around 1.3 to 2kg of umeboshi plums, about 3.6kg of miso, or a nukazuke bed of 1.6 to 2kg. Each piece is handmade at the kiln, so small variations in glaze, texture, and shape are part of its character, along with occasional black specks or minor rim irregularities. This is a brand-new item, ready to start its first batch of fermenting.
Enkeldogu Ten original 4-liter ceramic storage pot with lid, made in Takada, Tajimi, Gifu Prefecture, using local Takada clay. Produced by potteries continuing the 400-year tradition of Takada ware.
The simple, rounded pot has a wide opening for easy filling, mixing, cleaning, and inserting weights. Its rounded lower body is designed for easier lifting, while the simple lid knob is easy to grip. The glazed ceramic is suitable for ingredients with salt or acid, and its opaque body helps protect stored foods from light.
Capacity: approximately 4 liters when full. Dimensions: approximately 24 cm high with lid, 19.5 cm high without lid, and 20 cm wide. Suitable for approximately 1.3 to 2 kg of umeboshi preparation, approximately 3.6 kg of miso preparation, or 1.6 to 2 kg of rice bran bed for nukazuke pickles. A 1.5 kg weight measuring approximately 15 cm in diameter fits inside.
Made of ceramic. Wash with a soft sponge and neutral detergent before use. For long-term food storage, wash thoroughly and disinfect with alcohol before use. Handle carefully to avoid breakage, and use on a stable surface, as the pot becomes heavy when filled.
Each handmade piece varies in color, glaze, texture, shape, and finish. Small black spots, bubbles, pinholes, glaze variation, unevenness, protrusions, rim indentations, slight wobbling, and salt efflorescence may occur. The product is made by two potteries using the same materials and specifications, so appearance and finish may vary. Specifications may change between production runs.
