Masamoto Sohonten stands as one of Tokyo's most celebrated cutlery makers, trusted by professional sushi chefs across Japan for generations. This Kasumi Tamashiroko Deba knife embodies that rich culinary tradition, built specifically for heavy-duty tasks like filleting fish and light butchery.

Crafted from high-grade White Steel No. 2, the blade measures 185 mm long, 54.3 mm wide, and a thick 8.5 mm at the spine, with an overall length of 335 mm and a weight of 316 g. It comes fitted with an octagonal magnolia handle accented by a natural buffalo horn collar, offering balanced handling and a classic Japanese aesthetic.

This pre-owned knife shows some light cosmetic sharpening scuffs, but the overall shape remains intact with very little steel removed over time. It has been fully hand-sharpened through a multi-stone process ending on a fine Morihei Karasu 9000 grit stone, giving it an amazingly sharp edge ready for immediate work.
