A special new crop has landed from the Hachi Project, a collaboration between two producers at the forefront of the coffee world: Diego Bermúdez of El Paraíso farm in Colombia and Allan Hartmann of Rocky Mountain Coffee in Panama. Hachi, the Japanese word for eight, symbolizes infinity: the limitless possibilities that emerge when different regions, technologies, tradition, and innovation come together to shape coffee's future.

This lot, named Puma, uses the Supremo variety grown at Villa Esperanza Farm in Cauca, Colombia, at an altitude of 1,650 to 1,750 meters. Supremo comes from the Colombia cultivar, a hybrid of Caturra and Timor, bred through careful selection of larger beans. It's prized for its fruity, floral aroma, solid body, and juicy acidity, qualities amplified here by the farm's volcanic soil and wide day-night temperature swings, which help the cherries build extra sugar and aromatic depth.

Rather than anaerobic fermentation, this lot uses Hachi's exclusive Oxidative Natural process. Producers deliberately create an oxygen-rich environment, precisely managing airflow, agitation, and humidity to balance aerobic fermentation with enzymatic oxidation. The result is a cup with the depth and richness of a fine wine, balanced by clean, vibrant acidity.

Expect a juicy, layered profile with notes of grape, red apple, red wine, and cacao, rounded out by a fruity complexity reminiscent of American cherry and mandarin orange.
