This Noshu Magoroku stainless steel Santoku knife carries the name of one of Seki City's most respected blade makers. Gifu Prefecture's Seki City has been a center of Japanese cutlery craftsmanship for centuries, and this classic all-rounder wears that heritage in its shape and steel.

Measuring approximately 170mm along the blade, 45mm in width, and about 300mm in total length, this double-edged knife was designed to handle meat, fish, and vegetables with equal ease. The blade is stainless steel, just 1.5mm thick and weighing roughly 107g, set into a natural wood Japanese-style handle.

This secondhand knife is sold deliberately as a restoration project, left unsharpened and uncleaned so a new owner can bring it back to life by hand. That makes it an excellent choice for anyone practicing knife sharpening or polishing techniques. The steel body is straight, with no warping or bending, which is often the hardest flaw to correct in a used knife and makes this one a strong base to work from.

Expect visible signs of age and use: scratches, surface stains, light grime, and a few minor nicks along the edge. The blade will need a thorough cleaning and a proper resharpening before it's ready for the kitchen. The natural wood handle shows cosmetic wear from years of use but stays firmly seated, with no wobble, so it's ready for restoration or continued use as is.
