The story behind this product traces back to 1977, when Ishigamimura's current chairman, Hiroshi Hamada, opened Hamada Shoten. At the time, lightly salted seasoned plums were gaining popularity, so the shop set out to create its own version: a bonito-flavored ume. After careful selection of ingredients and countless trial batches, the result became an instant signature product.
In 2022, Ishigamimura revived that original recipe for a limited run, and it proved so popular that it quickly sold out and returned as a seasonal winter staple. This year's batch is once again available for a limited time and in limited quantity.
To recreate the original flavor with today's ingredients, the brand uses a dashi blend of four regional elements: bonito flakes from Makurazaki in Kagoshima, kelp from Hidaka in Hokkaido, roasted flying fish from Hirado in Nagasaki, and shiitake mushrooms from Ryujin in Wakayama, the company's home region. Together, they create a rich, umami-laden broth that balances beautifully with the plums' natural tartness.
Made with natural ingredients and no artificial seasonings, this ume is bottled together with its seasoning liquid to help preserve freshness naturally. Once you've enjoyed the plums, save the leftover dashi broth; it makes a flavorful base for your own home cooking.
